Indian spiced oats with coconut milk

I used part of a can of light coconut milk to make Thai peanut sauce (which was also NOM) the other day and then googled to try to find a way to use the rest. I AM SO GLAD I FOUND THIS RECIPE. It’s delicious, I can make it the night before and grab it in the morning, and it’s pretty healthy. 

I didn’t change much from the recipe except to half it to create two portions, instead of quartering it. 

This girl’s tummy is happy.
